new fav chocolate chip cookies

I have followed this blog and love her taste in music and monthly playlists and while listening I came across a delish recipe!  I love these chocolate chip cookies, they are the perfect mix of sweet and salty, but not too sweet or too salty.  They are just what a cookie should be soft and gooey on the inside, delish on the outside.  I have a thing for cookies.  B&I made them and paired with hot coco for friends on a wintery night.  They were a hit.  I actually ate one for breakfast today, the day after I knew I didn’t get enough of them the night before.  😉

Best Chocolate Chip Cookies
Bake at 375° for 8-10 minutes [until slightly golden]
Servings: 4-5 dozen small cookies

1 cup butter, room temperature
1 cup brown sugar, packed
3/4 cup granulated sugar
2 eggs
1 tsp. vanilla
3 cups flour
1 tsp. kosher salt
1 tsp. baking soda
2 cups semisweet chocolate chips

1. Heat oven to 375°. In your electric mixer, beat butter and both sugars well. Add eggs and vanilla.
2. In a separate bowl, combine flour, salt and baking soda. Use a whisk to mix together.
3. Slowly add the flour mixture to the wet ingredients in the mixer. On lowest level mix until all flour has been added and then increase speed and beat for 2 minutes.
4. Remove mixing bowl from stand and add in chocolate chips, stirring by hand.
5. Using your hands, roll dough into 1 inch balls and place 2 inches apart on parchment lined baking sheets.
6. Bake for 8-10 minutes until the tops are lightly golden. Cool and enjoy with a glass of milk.

Me: The dough may seem dry, don’t worry, if it’s too dry add an extra egg, and I’d recommend slightly undercooking them, like 6-8 min’s max, they keep thier moisture better and if the look a bit doughy, they cool perfectly.  Love!
